To make iced coffee with a coffee press, start with freshly ground coffee, coarsely ground like sea salt. Brew it double strength, using 4 tablespoons of coffee for every 6 ounces of water. Add the grounds to the coffee press and pour in hot water just off the boil (about 200°F/93°C). Let it steep for 4 minutes, then slowly press the plunger down. Immediately pour the hot coffee over ice—the melting ice ensures the perfect dilution and balance of flavor.
